Hey ,
we found out when we generate our Mailbox Reports that the Resources Mailboxes are shown as unlimited.
How i can set a Limit to the Resources Mailboxes in the CloudPanel? (to set the Quota for this )

If you are talking about the size of the mailbox, that is control via the mailbox plan. You need to set the Prohibit Send and Receive in MB and Max Mailbox Size in Megabytes to something greater than 0. Keep in mind changing the plan does not automatically update the settings on all mailboxes already assigned to that plan.
